Grupo Quina / Centralmed: food safety, hygiene, and great taste

With the opening of the first restaurant of Grupo Quina in June 2009, a very fruitful partnership began. Centralmed has supported this project of excellence, signed by Chef Vítor Sobral, to this day. Operating in the restaurant sector, topics related to food safety and hygiene have since occupied a central place in this collaboration.

 

What is Grupo Quina and what was its challenge?

Currently, Grupo Quina is responsible for a variety of dining spaces, namely: Padaria da Esquina (Lisbon), Oficina da Esquina (Azores, Angra do Heroísmo), Taberna da Esquina (Lisbon), Otro restaurante (Lisbon, Avenida), and Lota da Esquina (Cascais).

“In the beginning, the main challenge was the initial support for the opening of the first unit, namely the monitoring of the construction, the project, the acquisition of equipment, the development of circuits, among others,” says José Figueiredo, Head of Procurement of the company.

Centralmed This support extended, for example, to the organization of the prerequisites necessary for the implementation of the HACCP system, the creation of all documentation supporting the HACCP plan and its constant updating, training in good hygiene and food safety practices, and monitoring the pre-opening of all units.
